Thank you, Giovanna, for these fabulous suggestions. I completely agree; there's a world of difference between what we do "privately at home" at SCA-only events, and what we should be doing when we have guests (at demos).
I will add one more thing to Giovanna's comments about bringing activities with which to engage the public: talk to the public!
It's completely natural for us to clump together and talk to our friends in the SCA. We do it every time we get together. However, the whole point of holding a demo like this one is to meet, greet and engage the public. So... be aware of the public. Actively welcome and greet them (don't wait for them to approach you). Invite them to come closer and ask questions. Don't cluster and chat exclusively among yourselves; if you are chatting to friends (and this is OK), just be aware of your surroundings and break off your conversation in favor of a nearby member of the public -- the average person isn't going to break in on your conversation to ask you what you're working on.
"Everyone's a chatelaine" is never more true than at a public demo. :o)

Greetings.
After the Caponi demo last year I started thinking that perhaps having some general guidelines for demos would be a good thing. I spoke to several people who agreed that it was a good thing, so I am sharing my ideas with the Barony and Cantons.
Please note that these are MY thoughts on the subject of demos and should not be viewed as opinions by the organizer of the Caponi demo, the Barony, or the SCA in general.
